SOBA

(Buckwheat Noodles)

Regarding the cultivation of buckwheat (soba) in Japan,
9,300-year-old buckwheat pollen has been excavated from ruins in Japan,
and 3,000-year-old buckwheat seeds have been discovered.

About 2,800 years ago, rice cultivation began in the late Jomon to Yayoi period. 

In the Nara Period (710~794)
Buckwheat was positioned as a relief crop that could be harvested even in times of poor harvest.

In the Heian Period (794~1185)
Buckwheat was a cereal that farmers grew in small quantities in preparation for famine.

In the Kamakura Period (1185-1333)
Stone mortar technology was brought to Japan from China,
making it possible to grind a large amount of buckwheat flour,
which led to the production of SOBAGAKI (buckwheat round cake) and dumplings.

In the Muromachi Period (1336~1573)
There was the development from dumpling-shaped SOBAGAKI to noodle-shaped soba noodles called soba-kiri.

In the Edo Period (1603~1868)
Buckwheat became such an expensive food that it was presented to the shogunate by various feudal lords.
Since soy sauce was expensive at the time, soba soup was made with MISO until it became commonplace.

Buckwheat has been grown as an agricultural product suitable for cold climates and narrow land,
where it is difficult to grow rice and wheat.

Traditional soba food is made possible by the beautiful climate
and traditional techniques of Nagano Prefecture.

The soba that is usually eaten casually has reached the present due to a long period of development
and people’s ingenuity and reflecting on that has changed my way of thinking about soba.

CONDITIONS

Anyone over the age of 18 can participate at their own risk.
Those under 18 years old must be accompanied by a guardian.

Also, if you have a fever of 37.5 degrees celsius or higher or are not feeling well
within 3 days before the activity date, please refrain from participating.
